Skills and Abilities:

• A passion for cooking and an awareness of contemporary and innovative developments within the food and lodge industries as well as international trends

• This person to have excellent staff managerial / developmental skills, good cost control and a great deal of creative ideas and abilities.

Duties and Responsibilities:

• Drive the broader goals of the company, in terms of the kitchens, by planning and implementing Strategic Management Plans.

• Supervision and training of the kitchen staff in line with the company Standards

• Supervision of food preparation, in line with company Standards of Excellence

• Effective guest interaction to enhance guest satisfaction

• Administration of orders to minimize shortages and wastage and effective stock control

• Ensuring that the cleanliness and hygiene of the kitchen is of the highest standard

• Correct use and maintenance of kitchen equipment

• Communication with kitchen and lodge front of house staff to ensure the smooth running of the department

• Contribute towards the ‘green’ operations of the lodge, operating within lodge environmental parameters and constantly looking for ways to further ‘green’ lodge operations.

I’m currently in search of a Executive Housekeeper for this, 5 star, world class resort in Mozambique. The resort is situated in the most amazing location, nestled in a sheltered bay on Mozambique’s Lagoon Coast, just North of the South Africa Border. This exclusive resort has 2 camps one with 22 suites and 8 suites at the other camp.

Responsibilities:
The successful candidate will oversee the effective, overall running of the Housekeeping department
Supervise a team of 20 room attendants, 6 laundry staff and 8 public area attendants.
Planning timetables and shift work

Requirements:
a Minimum of 5 years experience working at 5 star properties in a similar role
Well Organized
Systems orientated
A Peoples person
Attention to detail is key and we require someone who strives for perfection.
The person has to have a hands-on approach
Healthy and sober habits
Has a nurturing way with staff, has to be fair and firm.
Strong knowledge of cleaning equipment and chemicals
Operate all laundry requirements on site.

Food is a large focus for the guests, with influences of Mozambique and fresh flavours from their vegetable garden, the kitchen will be a playground for someone that is passionate about food.

The focus of the kitchen is on freshness and simplicity where food is the statement.

This is a stressful position and the successful candidate needs to be extremely well organized with great communication skills and passionate about training staff.

The successful candidate will be responsible for managing a brigade of 18 staff members.
