We are now in search of an exceptionally talented Pastry chef for a 5 star game lodge located in the Sabi Sands. The ideal candidate will be well-versed in culinary arts with an ABSOLUTE LOVE for creating amazing pastries and desserts.

Responsibilities

  • Prepare a wide variety of goods such as cakes, cookies, pies, bread etc. following traditional and modern recipes
  • Create new and exciting desserts to renew our menus and engage the interest of customers
  • Decorate pastries using different icings, toppings etc. to ensure the presentation will be beautiful and exciting
  • Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget
  • Check quality of material and condition of equipment and devices used for cooking
  • Guide and motivate pastry assistants and bakers to work more efficiently
  • Identify staffing needs and help recruit and train personnel
  • Maintain a lean and orderly cooking station and adhere to health and safety standards

Requirements

  • Proven experience as junior Pastry Chef, baker or relevant role
  • Great attention to detail and creativity
  • Organizing and leadership skills
  • Willingness to replenish professional knowledge
  • In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition
  • Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)
  • Certificate in culinary arts, pastry-making, baking or relevant field

We are in search for a Executive Chef to oversee the kitchen for a Luxury Lodge in the Sabi Sands. The ideal candidate must come from a 5 star environment and be very guest orientated .

 

KEY OUTPUTS:

Service and Kitchen Management

  • Run and supervise the entire kitchen operation
  • Work with the GM to ensure standards and goals are met
  • Ensure all menus are followed and food standard is excellent at all times
  • Support the chefs in daily supplies ordering from central store
  • Support and train new chefs on certain recipes if necessary
  • Continuous monitoring and control of dishes going out
  • Make personal contact with guests daily
  • Continuous encouragement and training of staff to provide the best food experience to guests
  • Be flexible when receiving unexpected request from guests and ensure you are able to accommodate unusual dietary requirements
  • Oversee Kitchen Hygiene and enforce where training needed

People

  • Continuous training and motivation of all kitchen staff including on the job training
  • Ensure all staff understand their responsibilities
  • Work closely with General Manager to implement standards, and staff policies

QUALIFICATIONS REQUIRED:

  • Formal Chef Qualification
  • At least 5+ years Chef Experience required in 5 star hotels or lodges
  • International exposure is a plus

SKILLS REQUIRED:

  • Spoken and written English
  • Computer literate
  • Passion for food and the food experience
  • Ability to lead a team of people effectively
  • Strong management skills, day-to-day, and long term
  • The ability to motivate staff to consistently deliver
  • Ability to think and act creatively within a team
  • Good knowledge of hospitality operations including butler service
  • Ability to work flexibly

We are currently in search for THE MOST DELIGHTFUL, ENERGETIC and HANDS ON CAMP Manager for an INTERNATIONAL AWARD WINNING 5 Star LUXURY LODGE in KZN. The ideal candidate MUST come from a 5 star background and have EXTENSIVE MANAGEMENT SKILLS

KEY OUTPUTS:

  • Prepare welcome and departure notes for guests
  • Check guests in during the day and manage dietaries, children, or any other special requests
  • Implement and follow the BOPs
  • Host guests during the day – meet them back from drive and assist with any request they have
  • Ensure that all products that come into contact with the guest are consistently of the correct standard
  • Check set ups for breakfast, lunch and dinner
  • Make sure the main area is always tidy and styled to the BOPs
  • Host guests at meal times and check smooth running of service from the kitchen and waiters
  • Work closely with waiters and HODs to maintain a high service standard
  • Assist in any other departments as and when required
  • Host children’s activities at the lodge
  • Provide superior service and quality to guests
  • Must enjoy working with children and be creative when planning fun children’s activities

SKILLS REQUIRED:

  • Communication skills – with guests and fellow staff members
  • Standard of your work must exceed the standard of the lodge
  • Good organisational ability
  • Lateral thinking ability
  • Initiative
  • Must adhere to World Class Hospitality and Service Standards
  • Professional, courteous, hospitable to guests

PREVIOUS WORK EXPERIENCE REQUIRED:

  • Experience in the service industry especially in dealing with guests and staff
  • Previous camp manger/ safari host experience an advantage
  • Previous experience in working with kids an advantage
