Lodge Manager 5 Star Super Luxurious Game Lodge KwaZulu Natal

We are now in search for a Lodge Manager for this extremely luxurious 5 star lodge in the north of KwaZulu Natal

Key Outputs:

• Meet every guest and ensure they know who is looking after them
• Ensuring all organizational requirements around delivering a unique guest experience at the lodge is planned for and executed on a daily basis
• Ensure our brand standards are always maintained in all areas that make up the guest experience
• Represent the company brand in appearance and behaviour
• Create an environment where the company culture is fostered
• Innovate new ideas and ways to edge the brand and improve
• Ensure that our culture of rewarding and recognizing of staff is followed through all levels of the lodge
• Ensure that training & development of staff is coordinated
• Ensure that controls and systems are in place to ensure the sustainability of the business as well as conserving our resources
• Ensure the company hospitality DNA is known by all
• Relieve for the General Manager when on leave
• Hosting alternative nights
• Taking the lead on groups
• Oversee the water bottling plant

KNOWLEDGE REQUIRED (QUALIFICATIONS OR TRAINING PROGRAMS)

• At least 3 years relevant experience in a 5 star operation
• Some form of managerial experience
• Company Knowledge
• Valid unendorsed SA driver’s license essential.

SKILLS REQUIRED:

• MS office knowledge is a requirement
• Communication skills – with guests and fellow staff members

Camp Operational Manager World Class Super Luxurious Bush Camp Zambia

We are looking for a dynamic Camp Operations Manager for our extremely luxurious bush camps in Zambia.

Camp Operational Management:

Camp logistics, inclusive of weekly/monthly camp orders and supplies. As efficient as possible to avoid waste/over spending.
Leave roster for all staff at both camps -monthly.
Guiding roster and guest movements -daily/weekly updates.
Fuel issues and appraisal to avoid theft – daily and monthly.
Junior staff wages preparation and payment – monthly
C track appraisal ( transfer vehicle monitoring system for 3 vehicles)
Camp discipline (this includes management of staff noise/leave AWOL/ theft and security possibilities and prevention/ guide management in relation to guest expectations and camp operations.
Camp emergency awareness and action (i.e first aid etc)
Experience in the bush environment will be beneficial as we are remote

KNOWLEDGE REQUIRED

 3 – 5 years experience as an operations manager in a 5 star lodge
 Valid Class C driving license

Front Of House Manager 5 Star Super Luxurious Bush Camp Zambia

We are now in search for a Front Of House Manager for this World Class bush camp in Zambia

This role’s primary function is to maintain the service standards of the camp through on-the –floor management and supervision. It requires the individual to interact with guests daily and ensure that their stay at the Lodge is as memorable as possible. The role requires a high level of attention to detail, initiative and innovative thinking. The person should be energetic and exude a passion for their role.

It is ideal for someone who has come from the lodge industry who understands the personalised service required for the job. A Lodge Manager or strong Assistant Lodge Manager candidate looking for a new challenge would be ideal.

Minimum Requirements for this role:

Hotel school qualification
4-6 years work experience in a well-recognized five star hotel
Sound knowledge of food and beverage
Understanding of sustainability and responsible tourism principles

We are looking for someone who possesses the following skills:

Financial management skills
Management experience
Computer literate
Excellent attention to detail

FOH role includes the following:

Room checking to our standard/guest relations and communication/liaison with other camp departments. This involves being time conscious with respect to special wake up times for guests, making sure guests are on the right activity with the right guide and are on the right transfer/being picked up at the right time.
Bar duty, waiter and FOH staff management/hosting guests at bar or at table
Liaising with all staff re Bush Breakfasts and Special Sundowner extra activities.
Arranging private deck dinners for guests.
Communicating re guest problems/expectations.
Curio Shop control
Social media posting
Emergency awareness and action (i.e first aid ability etc)
Experience in the bush environment will be beneficial as we are remote

The lodge is a 5 star, award-winning boutique lodge nestled at the base of the ocean-facing Table Mountain National Park.

KEY OUTPUTS:

Kitchen Hygiene standards set

Responsible for training chefs & implementing kitchen standards

Correct chemicals and sufficient cleaning materials to be in stock at all times

7 day Menu set according to Food Styling Guide and approved by the company

Presentation as discussed and according to Styling Guide

Creative Bush Banqueting according to Food Styling Guide

Proactive Maintenance

Good communications with: All chefs; All camp managers; HOD’s, Lodge Manager and suppliers

Good stock controls and stock rotation

Good administration and personnel files to be kept according to Lodge Manager’s requirements.

Responsible for all food orders, storerooms and fridge and deep freezers

Left-over management: left-overs to be discussed and processed every day

Vehicles and containers transporting food to camps to be spotless

Checklists of all items going to camps in place

All food going out to guests at any time to be checked by chef

Chef to check buffets/dinner/breakfasts etc. at each camp at least 3 times per week

Minimal traffic through kitchen: kitchen staff, Exec chef and Lodge manager to enter through kitchen

All fridges and refrigerators and storerooms to be kept locked or keys to be left with an accountable Chef.

All meals and platters to be put out at last minute – fresh, fresh, fresh!

Quality and quantity of snacks to game drives to be checked

Bush banqueting, drink stops, picnics etc. to have checklists

Canteens organised

Good interaction with Guests, and other company Chefs: Invite feedback, exchange ideas; be suggestion-friendly; share experience

Good discipline and fair treatment: Exec Chef to be a Role Model

Be aware of & make your chefs aware of special dietary needs Guests
